The tlayudas is one of the typical dishes of Oaxaca, distinguished by its homemade, crunchy and Mexican flavor. Spread the beans on the tlayuda and add the cheese. Place it on a griddle over medium heat and heat until the cheese melts.
Meanwhile, heat the oil and add the zucchini, oregano, salt, pepper and season.
Pour the mixture over the tlayuda and incorporate the tomato. Remove the comal and place the arugula. Serve immediately. Garnish with a little guacamole.
