Tlayuda with vegetables

The tlayudas is one of the typical dishes of Oaxaca, distinguished by its homemade, crunchy and Mexican flavor. Tlayuda with vegetables

Ingredients for 6 servings

  1. A cup of refried beans
  2. Two tlayudas
  3. A cup of shredded Oaxaca cheese
  4. A tablespoon of olive oil
  5. A cup of chopped mixed zucchini
  6. One teaspoon of oregano
  7. Salt and pepper to taste
  8. A cup of sliced ​​tomato
  9. A bunch of arugula
  10. Guacamole to taste

Preparation

Spread the beans on the tlayuda and add the cheese. Place it on a griddle over medium heat and heat until the cheese melts.

Meanwhile, heat the oil and add the zucchini, oregano, salt, pepper and season.

Pour the mixture over the tlayuda and incorporate the tomato. Remove the comal and place the arugula. Serve immediately. Garnish with a little guacamole.
