IPN develops cereal bar rich in antioxidants

Students of the National Polytechnic Institute (IPN) made a bar with wheat flour, oatmeal and amaranth, stuffed with jam from Jamaica, rich in proteins , fiber Y antioxidants , essential nutrients for a good diet.

The cereal bar was designed by the students of the National School of Biological Sciences (ENCB), Jessica Guzmán Soriano, Ana Beatriz Villaseñor Altamirano, Adalí Rivera Armenta and Fernando Pérez Bárcena, who pointed out that currently there is a wide range of bars on the market of cereal, but none with the amount of fiber , proteins Y antioxidants than the one elaborated in the IPN.

The students of Biochemical Engineering pointed out that there are people who do not like the texture of oats, that is why they do not consume it. Hence, they were given the task of innovating. To standardize the exact formula they performed multiple tests. To achieve this, it was necessary to determine the adequate concentrations to achieve the adequate texture and consistency, since the wheat It has the property of forming gluten and therefore, it is difficult to add other types of flour in large percentage.

They indicated that both oats As the amaranth they contain a significant amount of amino acids essential for the organism, same that contribute to the constitution and repair of tissues and muscles, as well as to the improvement of the consistency of the blood of the human being. These are complemented with those of wheat and form protein of good quality.

Regarding the filling of the bar, the students commented that the taste is an innovation, but also the jamaica has properties antioxidants , which are potentiated with the thermal process to which it is submitted to make the jam.

This food product, says Guzmán, is made in accordance with strict quality standards and with totally natural ingredients; It does not contain preservatives, dyes, or artificial flavors.
