Students of the National Polytechnic Institute (IPN) prepared a vegetable-based snack as squash , eggplant Y carrot , to offer consumers, particularly children, a low fat candy , but nutritious.

In this regard, Olmedo Cruz said: "We seek to compete with processed snacks, which have no nutritional contribution, because our product has specific nutrients and a high content of fiber that helps those who consume it to avoid problems of obesity long-term".

In principle, the polytechnic students tried with fruits and a great variety of vegetables , without achieving the desired consistency, so they focused on the vegetables with high content of fiber and that they had a specific nutritional contribution, in addition to keeping their characteristics under warming conditions. Its final result should be very similar to that of French fries.

After a series of tests, the young people observed that the vegetables they could best work with were the chayote, the eggplant and the carrot:

"The chayote, for example, has a high content of potassium and zinc, very important in the formation of enzymes, contains seven of the nine amino acids essential for the human body, such as lysine , which allows the body to absorb calcium; methionine , necessary for the metabolism of fats; phenylamine Y valina , which reduce stress levels, among others, "said Claudia Olmedo.

The students polytechnics They pointed out that consuming eggplant helps to reduce cholesterol in the blood, helps to prevent fatty deposits in the arteries and prevents arteriosclerosis . Soria Sánchez said that the eggplant contains antioxidants , which protect aging to the body's cells and exert an effect anticancer .
