Ingredients for six servings

  1. A quarter cup of fresh lemon juice

  5. Two teaspoons of olive oil
  6. Three medium chayotes, peeled and cut into slices

  9. Two medium tomatoes, cut into cubes
  10. A quarter teaspoon of black pepper

Preparation

In a food processor or in a blender mix the serrano peppers to form a thick paste. Gradually pour half of the chopped onion and garlic to the processor.

Remove what remains stuck to the sides of the processor and add it to the mix; Add the lemon juice to the processor and continue mixing. Pour this sauce into a glass bowl, cover it with plastic wrap and let it sit for 30 minutes.

In a large skillet heat the olive oil over moderate heat, place the rest of the onion and garlic; sauté for two minutes, add the chayotes and continue sautéing and stirring occasionally for about 5 more minutes.

Add the chopped peppers and cook another five minutes; Add the black pepper and remove the pan from the heat. Put the vegetables in a bowl and place in the refrigerator; let cool about two hours.

To serve the vegetables, place them in a large bowl and sprinkle with the hot sauce; to add more color add the tomatoes cut into cubes.
