Therefore, students of the National Polytechnic Institute (IPN), decided to contribute to improve the feeding of people suffering from this problem and elaborated cookies enriched with iron from an animal source, which can help level the indices of the mineral in the blood when included in the diet daily

This food was created by the students of the National School of Biological Sciences (ENCB), Claudia Gisela Mares Morales, Vicente Aguiñiga Juárez, Nayeli Paulina Moreno Medina and Alejandro Miranda Ramírez, who managed to add beef liver biscuits, a source with high content of iron, and obtain a pleasant product to the palate, thanks to the knowledge acquired during the career of Biochemical Engineering.

The young polytechnics explained that a deficiency in iron can cause iron deficiency anemia , which is the most common and, consequently, decompensation is generated in the metabolism , because many enzymes use the iron as a co-factor to carry out their metabolic reactions .

They mentioned that the problem of anemia it is gradual, since the levels of iron they descend little by little and some of their manifestations can be the Excessive fatigue , irritability Y fainting , but at this stage there are already specific treatments.

In favor of vitamin A and C

In this regard, Miranda Ramírez indicated that they chose the cow liver as raw material to make cookies, because it is a source of iron easily assimilated by the human body and although this mineral is also found in salts and some fruits and vegetables, it is not assimilated in the same way as the content in the cow liver :

"The cow liver It also contains other beneficial nutrients for health, such as vitamins A and C . "It has been proven that this viscera of the res is the only food of animal origin that contains vitamin C , which makes it easier to assimilate iron ", he claimed.

Mares Morales pointed out that the treatment given to the liver and the process to prepare the cookies is meticulous, so that the temperature does not deteriorate the nutrients of the product.
