Roasted fish with black bean vinaigrette

Ingredients

2 fish fillets

1 tablespoon of oil

2 tablespoons of vinegar (preferably red wine)

½ tablespoon chopped garlic

½ tablespoon cumin powder

½ cup cooked black beans (must be firm)

4 tablespoons chopped bell pepper

2 tablespoons chopped celery

2 tablespoons chopped red onion

½ cup fresh chopped cilantro

Salt and pepper

 

Preparation

 

 

1. Season the fish fillets with salt and pepper.

2. Heat the oil in a skillet over medium heat. Add the fish and stir on each side until golden brown.

3. Remove the fish from the pan and place it in a bowl.

4. Mix the rest of the ingredients in a bowl and pour them over the fish.
