Creates IPN yogurt against high cholesterol

Students of the National Polytechnic Institute (IPN) developed a yogurt enriched with xoconostle , which represents a nutritional alternative for people with glucose problems and cholesterol in the blood, because it is rich in fiber and reduced in carbohydrates.

The dairy product elaborated in the National School of Biological Sciences (ENCB) by the students José Santiago Mújica Sánchez, Diana María García Rodríguez, Gerardo Silva Vázquez and Ricardo Pérez Salazar, will allow to diversify the consumption of xoconostle , food that is currently ingested little, since 70% is wasted because people do not know their properties.

The xoconostle contains inulin , fiber soluble that helps keep the digestive system and it's also an important source of calcium .

The IPN youths revealed that this bitter tuna (xoconostle) is produced mainly in the State of Mexico, Zacatecas and the Federal District and is used as an ingredient in traditional Mexican food.

One of the creators of this product, Santiago Mujica , said that currently there are yoghurts with fiber in the market, but none made with xoconostle , which is also low in calories: "It is a very complete and optimal food for the health of people, we want it to be on sale in a very short time".
