The wordpozole comes from Nahuatlpozolli, which means "sparkling", orpozol, "foam". This Mexican dish is made from corn , whose large white grains (also known as cacahuazintle) open as a flower and form a foam, and pork or chicken is added as a secondary ingredient.

Ingredients:
1 kilo of corn for pozole
2 cloves of garlic
½ onion
1 kilo of pork loin, cut into pieces
1 kilo of pork spine, cut into pieces
1 kilo of pork head, cut into pieces
1 kilo of tomato
6 dry wide chiles (without veins or seeds and soaked in hot water)
3 teaspoons of vegetable oil
Salt to taste

Dried oregano
Chopped onion
Sliced lettuce
Radishes
Lemons cut in half

Wash the corn and put it in a casserole over high heat with water until covered, add the garlic and the onion; let it cook until it softens. Add the meats and salt to taste, cover again with water and boil until soft (add water as many times as necessary).
Blend the chilies with the tomatoes and strain; fry in the oil and season. Add this mixture to the broth, boil and serve. Accompany with oregano, onion, lettuce, radishes, lemon and toast.
