Broccoli salad with nuts, raisins and cheese

When the weather is very unstable it is normal to register respiratory diseases such as colds, so we must strengthen our defenses with food to prevent influenza or other respiratory disease.

A good way to say goodbye to the cold is broccoli, thanks to its rich content of iron, vitamins C and E, folic acid, calcium. So do not hesitate to include it in your diet. Broccoli salad with nuts, raisins and cheese

Ingredients

  1. Half a kilo of broccoli
  2. A clove of crushed garlic
  3. A quarter cup of walnut
  4. Half a cup of chopped panela cheese
  5. A spoonful of raisins
  6. Two tablespoons of coriander leaves
  7. Three tablespoons of olive oil
  8. Salt, pepper and vinegar to taste

Preparation

Cut the broccoli sprigs and leave a small stem. With a peeler, clean the stems and cut them into small sticks of approximately four centimeters. Cook in salted water until ready; drain and let cool.

Soak the raisins in a small container with hot water for 10 minutes or until tender; drain and reserve.

In a bowl prepare a mixture with the garlic and salt until you get a paste, then add the vinegar, pepper and two tablespoons of olive oil.

In a pan heat 1 tablespoon of olive oil to fry the walnuts for five minutes or until golden brown. Then place them on a paper towel.

Mix the raisins, cheese, nuts and broccoli in a bowl and add the vinaigrette. Season to taste and place the cilantro on top. You can add a little chicken to use as a main course. And you, do you eat food to prevent the flu? If you want to know more recipes click here
