Creamy rice with octopus

Ingredients

  1. Half a kilo of cooked octopus
  2. 350 grams of brown rice or basmati
  3. One liter of fish stock
  4. A chopped onion
  5. One garlic clove
  6. Chopped parsley
  7. Cheese provoleta
  8. Olive oil
  9. Salt to taste
  10. Saffron to taste

Preparation

In a refractory place some of the fish stock with some saffron strands and heat it in the microwave. Reservation.

In a saucepan heat a little olive oil and add the onion and garlic; When the onion is a little transparent, add the octopus and let season for a few minutes.

Add the rice and fish stock to the pan, including the one with saffron. Stir gently and add a little salt. Let cook for 15 minutes to evaporate most of the broth. Sprinkle a little chopped parsley. Serve and grate a bit of cheese on top of the portion.
