Fried zucchini with tomato coulis

Ingredients for 6 to 8 servings

Tomato coulis

  1. A peeled tomato, disheartened and diced
  2. Two tablespoons of vinegar
  3. A spoonful of honey
  4. A spoonful of shallots
  5. Two spoonfuls of chopped basil
  6. Salt and pepper to taste

Pumpkin fries

 

  1. One cup of bread crumbs
  2. Salt and pepper to taste
  3. A cup of flour
  4. Two eggs lightly beaten
  5. Three zucchini in julienne
