LENTIL SOUP

LENTIL SOUP

(4 portions)

 

INGREDIENTS

 

250 g of tomatoes cut into pieces

1 cup of lentils

1 medium onion, chopped

½ chopped pepper

2 sprigs of chopped parsley

1 garlic clove finely chopped

1 bay leaf

Salt, pepper and paprika to taste

 

PREPARATION

1) Clean and wash lentils well.

2) Combine all the ingredients in a saucepan, cover them with 4 or 5 cups of water and let boil for an hour and a half.

3) Rectify the seasoning and serve hot.

Remember that lentils are also recommended for people with difficult digestion such as children, people with irritable bowel, pregnant women and older adults.

 

A good tip to improve the bioavailability of lentils iron is to serve, during the same meal, a small portion of meat or fish.
