ZARANDE SHRIMPS WITH PINEAPPLE AND BASIL

ZARANDE SHRIMPS WITH PINEAPPLE AND BASIL

(4 portions)

· 20 pieces of shrimp, deveined, skinless and with tail (5 pieces per serving)

· Salt and pepper to taste

· 4 Tablespoons olive oil

· 3 cups of prepared white rice

For pineapple and basil:

· 3 cups pineapple in cubes

· 3 tablespoons of lemon juice

· 2 tablespoons of olive oil

· 1 tablespoon chopped basil

· 1 spoonful of chopped mint

· 2 tablespoons crushed quaresmeño chile

· ½ cup of SPLENDA or sweetener Without Calories, granulated

· Salt and pepper to taste

For the achiote

· 70 grams of achiote

· 2 gourd tomatoes cut in quarters

· 1 guajillo chile deveined and without seeds

· 1 clove garlic

· 1/4 piece of onion

· 1 tablespoon white vinegar

 

PREPARATION

 

  1. For the Pineapple and Basil , mix all the ingredients and leave

rest for about an hour.

  1. For the achiote : Boil the garlic, the onion, the tomatoes, the guajillo chile and

Blend with vinegar and achiote. Strain; leave on fire for 10

approximately minutes; Season with salt and pepper.

  1. Mix the shrimps with the achiote until they are well

Impregnated and sauté in a pan with the hot olive oil.

  1. On a plate put a large spoonful of rice, arrange on top the shrimps shaken and to one side the pineapple with basil.
