Vegetable eggs?

Mexico ranks number one in chicken egg consumption, according to figures from the National Poultry Institute. However, this situation could change because of the appearance of a greener option.

Scientists of the American company Hampton Creek Foods have developed a fully vegetable egg called Beyond Eggs . Which is presented as a less cruel alternative, free of hormones and whose manufacture does not emit the amount of carbon dioxide involved in raising chickens.

The chicken egg, besides being considered a factor that damages health if consumed in excess, is related to animal abuse. Since in most of the farms there is not even the space, conditions and hygiene to keep these animals in perfect health.

Beyond Eggs seeks to supplant the components of the chicken egg, at a molecular level, with vegetables such as tree sap, sunflower lecithin and pea. In accordance with Joshua Tetrick. Hampton's executive director, this substitute is equal to the egg plus its nutritional value and flavor is similar.

Although FDA approval is still lacking, this product is expected to reach the market at a cost 18% lower than the conventional egg; besides that it will be the beginning for a future in foods that besides being organic, are sustainable and hygienic.

Currently this food has had a decrease in consumption due to the increase in its price; but, it is still part of the basket and diet of the Mexican citizen.
