Students from the National Polytechnic Institute (IPN) developed a snack in form of totopo that can be consumed as fast food and, at the same time, contributes to enrich the diet daily for its high content in proteins Y fiber , due to its formula based on turkey, oats, corn and carrot.

Karen Azucena Flores Urbán, Yazmín Idalia García Bonilla, Angélica Yazmín Mejía Salazar, Raquel Andrea Chavez Torres, Mariana Escobedo Rendón, Daniel Cisneros Rendón and Francisco Loyola Reyes, students of the National School of Biological Sciences (ENCB) of the IPN, were the creators of the draft.

The choice of Turkey meat to elaborate the snack is because it is an important source of proteins and its content grease It is very low. The proteins of the meat They have a better use when mixed with cereals such as corn and oats and when the carrot is added, a better digestion .

In this regard, Flores Urbán indicated that in six months they standardized the formula and flavor of the snack, and invested a similar time for multiple tests in order to determine the thickness and the ideal temperatures:

"The first attempts to prepare the snack were not successful; the critical points were to establish the adequate thickness and the temperature to which it would be subjected, in order not to risk burning the product and losing its properties, "he explained.

García Bonilla mentioned that based on the sensory tests they carried out, the snack had great acceptance due to its flavor and crunchy consistency.

He indicated that in order to keep the product in good condition, it was packaged in a laminated container, because with this type of material the moisture inside the product is prevented and the proliferation of microorganisms :

"Later we could use a package of modified atmospheres and prolong the shelf life of the product," he added.
