In this regard, the creator of this product, Rodolfo Rendón Villalobos points out that the idea of ​​adding to the corn tortillas, chia flour, arose because this seed is the richest natural source in fatty acids , Omega 3 .

The researcher of the Center for the Development of Biotic Products (CEPROBI) of the IPN, states: "In our society a diet high in fat has been associated with a high number of deaths per cardiovascular diseases ".

"However, populations that have increased the consumption of fatty acids Omega 3 Y Omega 6 have shown a low incidence of coronary diseases ”.

For a long time chia was a staple in the diet of pre-Columbian societies, but after the Spanish conquest, its use decreased; the native agricultural production was destroyed and in the food habits of the population the consumption of wheat , barley Y carrot .

In this sense, the scientist and researcher of the IPN clarifies that it was at the end of the last century that interest in chia resurfaced: "Especially when it was considered a good source of Dietary fiber , protein Y antioxidant , in addition to its high content of fatty acids. "

Chia seed is also used as an ingredient to make bread, energy bars and dietary supplements.

The tortillas developed in the IPN also help strengthen the immune system, since it has been shown that the Omega 3 It has a regulating function of the synthesis of substances that cause disorders such as fever, pain, swelling and irritation.
