Super Mexican pap for seniors

A group of biochemical engineers from the National Polytechnic Institute (IPN) has developed a highly nutritious porridge which may be the answer to improve the nutrition of grandmothers and Mexican grandparents. It is made with raw materials from first quality and special ingredients , is rich in calcium, proteins, antioxidants and fiber, and its formula has been considered to people with diabetes or lactose intolerant.

Faced with the need to offer a rich, varied diet and according to the characteristics of the elderly and due to the lack of products in the Mexican market directed to this sector of the population, the researchers of the National School of Biological Sciences of the IPN are considering creating a microenterprise that puts this superpapilla at their disposal.

The experts speak

Ricardo Ruiz Saucedo, one of the biochemical engineers of the project, indicated that the porridge contains milk (important source of protein and calcium), cornstarch and rice flour (which provide carbohydrates), as well as grenetina, strawberries and blueberries, an important source of vitamin C .

It is proven that blueberries are the foods with the greatest amount of antioxidants, besides contributing fiber to facilitate digestion . Another of the researchers, José Ma. Alonso Hernández, stressed that in order to offer a food that does not require the process of chewing, the porridge has a creamy consistency, since for many people the crushed food is not palatable. To achieve this consistency multiple tests were carried out and, at the same time, they required standardizing the thermal process, with the purpose of conserving the nutrients intact.

Goal fulfilled: improve the nutrition of the elderly

One of the objectives fulfilled was to obtain a 100% natural product , so the porridge does not contain preservatives, flavors, or artificial colors. For the creators of the superpapilla keep the health of the elderly in good condition and offer a balanced and sufficient diet, represents having met the goal.
