Poached egg with smoked trout

Poached egg with smoked trout

Ingredients for two people

 

  1. Two spoons of olive oil
  2. Two pieces chopped onion cambray with all and tail
  3. A clove of minced garlic
  4. A piece chile serrano (to taste)
  5. A cup of smoked trout
  6. Half a tablespoon of coriander
  7. Half a spoonful of epazote
  8. Four eggs
  9. Half a liter of water
  10. Two tablespoons of vinegar
  11. Two integral bagels

Preparation of the filling

In a hot pan over medium high heat, add the olive oil, onion and garlic; Fry until they are transparent. Add serrano pepper and season for a minute. Remove from the fire. Add the trout and sprinkle with cilantro and epazote. Reservation.

Heat the water in a saucepan over medium heat without reaching boiling. Place each of the eggs in the water. Let them cook for three or four minutes and remove from heat. Remove the eggs and drain them on an absorbent paper.
