IPN produces bean cereal for children

Researchers of the National Polytechnic Institute (IPN) resorted to corn Y bean to make a cereal nutritious for children of school age, which is reduced in sugars; It contains 38% more protein and 138% more fiber than commercial cereals.

In this regard, the owner of the research project carried out in the Interdisciplinary Research Center for Regional Integral Development (CIIDIR) Durango Unit, Oscar Velasco González He pointed out that through the products that they have developed over a decade of research, in addition to contributing to improve the nutrition of infants, added value to the corn and to bean .

Velasco González, clarified that the cereal, which is recommended for children's breakfast, was prepared in response to new market trends. Two varieties were made from the mixture of corn and beans. The first contains sugar as a sweetener, and the other, honey and inulin , with the purpose of reducing the consumption of sugars.

The IPN researcher pointed out that the interest to increase the use of beans is due to the fact that this is the main agricultural product of the state of Durango: "For almost 10 years we have been thinking of developing technologies to increase the added value of the grain, initially aimed at get additional profits. "

The head of projects of CIIDIR, said that it initiated investigations to develop nutritious foods for children of school age, replacing the so-called junk products: "That's how we made some nutritious snacks with the mixture corn -bean to meet the profile of amino acids recommended by the Joint FAO-WHO Commission (Food and Agriculture Organization and the World Health Organization for its acronym in English)".
