When consuming low GI foods, glucose levels rise slowly in the blood, so that the stimulation of the pancreas decreases and the secretion of insulin is also kept low.

In addition, it decreases due to hyperinsulinemia and hunger, since it slows down the secretion of noradrenaline and cortisol, which are hormones that stimulate the appetite .

Therefore, it is recommended to include in a diet those foods that have a low GI, a lot fiber (soluble and insoluble), and with a high protein content, which delays gastric emptying.

Substituting foods with high GI, for those that help to reduce it or that have a low GI, is the most appropriate strategy that can be followed to control diabetes.
