Diet vs blood glucose

The feeding to control the glucose in blood is one of the key points of any treatment for those people who have diabetes or who are at risk of suffering it.

To be able to establish and carry out correctly a diet for diabetes, it is important that the person understands a basic term: the glycemic index, by which an adequate diet is determined, according to the researchers Íñigo Verdalet, Paulina Téllez and Elvia Cruz, from the Universidad Veracruzana .

Blood sugar is the amount of sugar (glucose) in the blood, while the glycemic index (GI) is a numerical way of describing the rate of absorption of glucose. carbohydrates ; that is, the content of glucose of each food.

When we are fasting, the glycemia it is approximately one gram of glucose per liter of blood; When eating a carbohydrate (carbohydrate, starch), it is transformed into glucose by means of the digestion and the enzymatic action.

In this way the increase in blood glucose is generated, which gives rise to the secretion of insulin, and also increases the risk of gaining weight. The speed with which this process is carried out, for each food, determines its glycemic index.

When consuming low GI foods, glucose levels rise slowly in the blood, so that the stimulation of the pancreas decreases and the secretion of insulin is also kept low.

In addition, it decreases due to hyperinsulinemia and hunger, since it slows down the secretion of noradrenaline and cortisol, which are hormones that stimulate the appetite .

Therefore, it is recommended to include in a diet those foods that have a low GI, a lot fiber (soluble and insoluble), and with a high protein content, which delays gastric emptying.

On the contrary, those with a large content of carbohydrates , have a high GI, including white sugar or sucrose. In this regard, it is suggested to carry out a series of measures for its control, such as those chef yogi, Mariano Garcés , explains in an interview with GetQoralHealth :

Substituting foods with high GI, for those that help to reduce it or that have a low GI, is the most appropriate strategy that can be followed to control diabetes.

In addition, a diet with low GI foods not only allow the control of diabetes and obesity , but also serve to decrease the levels of cholesterol total and triglycerides , which reduces the risk cardiovascular .
