Crema Poblana

Crema Poblana

Ingredients

1 cup of pumpkin flower

¼ chopped onion

1 clove garlic

½ liter of chicken broth

1 chile poblano, roasted, peeled and in rajitas

1 tablespoon of corn starch

½ cup corn husked and cooked

2 tablespoons of oil

a pinch of salt


Preparation

1. Place a tablespoon of oil in a saucepan and fry the onion, garlic and cornstarch.

2. Add the chicken stock while stirring.

3. Blend the three pumpkin flowers with the corn and a little broth. Add this mixture to the chicken stock found in the fire.

4. When you release the first boil, add the other two chopped flowers, the chile poblano slices and let warm for four minutes.

5. To make it creamier you can add a spoonful of plain yogurt when serving.
