Cold shrimp and jicama soup with basil

Cold shrimp and jicama soup with basil

Ingredients for eight servings

  1. Two medium cucumbers without seeds, peeled and chopped
  2. A quarter cup of balsamic vinegar
  3. A large jicama cleaned and cut into cubes
  4. Two tablespoons of Splenda sugar substitute
  5. Two teaspoons of salt
  6. Eight ounces of raw, peeled and deveined small shrimp
  7. A quarter teaspoon of salt
  8. Half a teaspoon of cayenne pepper
  9. Two teaspoons of olive oil
  10. Two and a half cups of skim milk
  11. Two and a half cups of low fat sour cream
  12. Half a cup of chopped basil
  13. Two peppers (red and yellow) medium, roasted, peeled and cut into strips

Preparation

Mix the cucumbers with the balsamic vinegar in a food processor for one minute, until you get a puree or until it feels creamy.

Place the cucumber puree in a large bowl, add the sugar substitute and the jicama. Move until all the ingredients are incorporated.

Put the shrimp in a medium bowl and sprinkle with a quarter teaspoon of salt and cayenne pepper.

In a large skillet over high heat, heat the olive oil and add the shrimp; cook until they turn pink, approximately for two minutes. Remove from heat and reserve.

In a large bowl beat the sour cream and milk and add to the mixture of cucumbers and jicama. Add the shrimp, basil, roasted peppers and stir until all the ingredients are incorporated. Let cool and serve.
