Chicken with pepper and nopales

Chicken with pepper and nopales

Ingredients for four servings:

 

  1. Half a kilo of shredded chicken breast
  2. Two cups of cooked cactus
  3. Three chopped ball tomatoes
  4. Three red peppers
  5. Half a cup of sliced ​​white onion
  6. Three cloves of garlic, chopped
  7. Four teaspoons of olive oil
  8. Two bay leaves
  9. Two pieces of clove
  10. Salt and pepper to taste
  11. Defatted chicken broth

Preparation

Heat two teaspoons of oil in a saucepan; add the garlic and onion. Fry until the onion is transparent and incorporate the shredded chicken. Add the laurel, cloves and pepper; let cook over moderate heat.

In another pan, heat the rest of the oil and fry two chopped peppers with nopales and tomatoes; when fried add them to the chicken pan. Mix until all the ingredients are incorporated and sprinkle the defatted broth; cook on medium heat for 10 minutes.

Cover the casserole and place in the preheated oven at medium-low temperature until the chicken is cooked. Remove the chicken from the oven and serve it with roasted pepper as an ornament. Enjoy a rich glass of white wine and take advantage of all its benefits. Advantage!
