BEANS SALAD

The beans belong to the group of legumes and stand out as a highly energetic food, due to its high protein content, in addition to helping to cleanse the body for its diuretic and depurative properties, so they are ideal in a healthy diet.

The beans are among the foods rich in fiber , so they favor an adequate intestinal transit and prevent the constipation . They also contain vitamins such as vitamin B1 or niacin, and minerals such as manganese, iron, copper, calcium and phosphorus.

Being diuretic and depurative, the beans cleanse the organism, the kidneys and the blood, in addition to helping to control the levels of cholesterol and glucose in blood, so they are ideal for people hypertensive Y diabetes .

It is also usually included in the diets for people with conditions such as Alzheimer's , because its content in lecithin and choline can help improve symptoms.

 

BEANS SALAD

Ingredients (4 servings)

500 g of fresh beans (in pod)
1 onion
1 bunch of parsley
100 g of ripe tomato
Olive oil
1 pinch of salt

Preparation

1. Clean the beans by removing them from their pod.
2. Finely slice the onion and remove the stems of the parsley.
3. Sauté the onion in a little oil, add the beans and a glass of water or vegetable stock, cover and let simmer.
4. Meanwhile, cut the tomatoes in squares and chop the parsley, stir in a bowl and season with oil and salt.
5. Add beans when soft, mix and serve warm or cold salad.

Remember that you can take advantage of all the properties and nutrients of beans if you eat them both fresh and dried, in various dishes, like this salad. In the same way beans and chickpeas can be prepared.
