5 healthy dressings

According to chef Pía Quintana, author of the book Healthy Mexico, the dressing is another ingredient for any dish, because it provides new textures and highlights the flavor of the rest of the ingredients. So you can check this theory and give a different touch to your food, we share five dressing recipes:

1.- Cilantro: You can combine it with a salad or a delicious grilled fish.

Ingredients

  1. Half a cup of sherry vinegar
  2. One teaspoon of Dijon mustard
  3. One and a half cups of olive oil
  4. Two serrano peppers
  5. Half a cup of coriander leaves
  6. Half teaspoon toasted cumin
  7. Two cloves of garlic
  8. Half a teaspoon of salt

Preparation
Blend all the ingredients, without doing too much so you do not lose color.

2.- Jamaica: It is ideal for any salad with goat cheese.

Ingredients

  1. A cup of water
  2. Three-fourths of a cup of Jamaica flowers
  3. One and a half tablespoons of honey
  4. A spoonful of Dijon mustard
  5. Juice and zest of two yellow lemons
  6. Salt and pepper to taste
  7. Three-quarters of a cup of extra virgin olive oil

Heat the water and add the flowers of Jamaica, wound for 15 minutes and reserve until it cools. Cuélala. In a bowl mix honey, mustard, juice and lemon zest and season with salt and pepper. Add half a cup of the Jamaican concentrate until it is incorporated, emulsify with the oil and rectify the seasoning.

3.- Tamarindo: Use it seasonal or dehydrated fruits.

Ingredients:

  1. Three tablespoons of tamarind pulp
  2. Two and a half tablespoons of honey
  3. Half a cup of guava vinegar
  4. Salt and pepper to taste
  5. One and a half cups of olive oil
  6. Cold water

Preparation
In a bowl mix the pulp, honey, vinegar, salt and pepper. Emulsify with the oil and add a little water.

4.- Yogurt with chipotle : Add it to raw vegetables or grilled chicken

Ingredients

  1. A cup and a quarter of natural Greek yogurt without sugar
  2. Three-quarters of a cup of extra virgin olive oil
  3. Juice of two lemons
  4. Two tablespoons of marinated chipotle chile
  5. A teaspoon of finely chopped cilantro
  6. Salt and pepper to taste

Preparation
In a bowl mix all the ingredients and rectify the seasoning.

5.- Nut: For steamed vegetables

Ingredients

  1. Half a cup of white wine vinegar
  2. A seed of star anise
  3. One teaspoon of Dijon mustard
  4. One teaspoon of honey
  5. A quarter of a cup of water
  6. A teaspoon of salt
  7. Half a teaspoon of pepper
  8. One cup of avocado oil
  9. Two tablespoons of chopped walnut

Heat the vinegar with the anise until it is reduced by half and reserve. When it is cold, remove the anise. In a bowl mix the vinegar, mustard, honey and water. Season with salt and pepper and emulsify with oil. Add the nut
