According to chef Pía Quintana, author of the book Healthy Mexico, the dressing is another ingredient for any dish, because it provides new textures and highlights the flavor of the rest of the ingredients. 1.- Cilantro: You can combine it with a salad or a delicious grilled fish.
Blend all the ingredients, without doing too much so you do not lose color.
2.- Jamaica: It is ideal for any salad with goat cheese.
Heat the water and add the flowers of Jamaica, wound for 15 minutes and reserve until it cools. Cuélala. In a bowl mix honey, mustard, juice and lemon zest and season with salt and pepper. Add half a cup of the Jamaican concentrate until it is incorporated, emulsify with the oil and rectify the seasoning.
3.- Tamarindo: Use it seasonal or dehydrated fruits.
In a bowl mix the pulp, honey, vinegar, salt and pepper. Emulsify with the oil and add a little water.
4.- Yogurt with chipotle : Add it to raw vegetables or grilled chicken
In a bowl mix all the ingredients and rectify the seasoning.
5.- Nut: For steamed vegetables
Heat the vinegar with the anise until it is reduced by half and reserve. When it is cold, remove the anise. In a bowl mix the vinegar, mustard, honey and water. Season with salt and pepper and emulsify with oil. Add the nut
